Crab Salad

In a previous lifetime, I spent many years working at a golf course. It was one of my more enjoyable jobs because the crew was always fun and seemed to work together. There are pretty easy tasks associated with clubhouse work. Clean the members clubs, wash the carts, collect the range balls. But work always became quite a bit busier during tournaments.

Next to the pro shop sat the restaurant/clubhouse. And if there is one thing I remember (from the time I worked there), it was the famous “crab salad”. This special dish was special ordered by the owners, and chefs were instructed to keep it on the menu at all times. I’ve tried many times to recreate it, and think I’ve come pretty close.

Try This:
8 ounce imitation crab meat (flaked)
2 tablespoons REAL mayonnaise
1 tablespoon sour cream
1 tablespoon olive oil
1 tablespoon WHITE vinegar
1 teaspoon pepper
2 teaspoon salt
1 teaspoon garlic (powder)
2 celery sticks DICED

Mix together and let set in fridge for at least 3-4 hours.

Layer on Club Crackers or enjoy with Triscuits and a Fresca!

An Update

First things first…received some great news from a few docs. Cannot express how incredibly relieved I feel right now. Also crossed off a worry that has been nagging me for many years. Good day? No, great week!

That said, in other news, we were dealing with a mess here (tech). Still working on figuring out a good set up for my “extras”. Started with upgrading a case… that didn’t go as planned. Will probably part out that pc, and use an OptiPlex 3070 to replace it.

Absolutely love the Intel Optane (16G) for Linux operating systems. This is the third I installed and all are performing great. Affordable, fast, and just enough space to hold the essentials. (Lots of traditional SSDs/thumbs being used for “storage” space now).

PBS (OH)

If you do a tuner scan with antenna attached to your tv (or myth system), you are likely to find quite a few PBS channels. And these are great for documentaries, as well as government/statehouse hearings or debates. There are also historical programs/stories… and I caught a pretty good one the other day. It covered famous historical women from the Columbus area (Ohio). And during the credits, discovered a great tune.

Columbus Clip

Don’t know much about this band, but was shocked at how great the song was, and how well it fit the mood of the piece. Oddly.

Change of Seasons.

Fall is coming, and to be honest, missing the trails. From west central Ohio down to the south west region there is a lot to offer. Whether its bike trails, nature preserves, frisbee golf courses, etc. Lots to look at, lots to see.

You can even find some unexpected hidden parks and falls if you do a little research.

Looking forward to getting back out there.
